The Sip & Savour Sunset Series is a curated collection of food and wine grazing experiences, thoughtfully designed to be enjoyed as the day transitions into evening. Each experience invites guests to slow down, share generously, and savour every detail.
Held every Friday and Saturday from 5:30pm – 7:00pm in Hervé’s Bar, Sip & Savour is perfectly suited to an indulgent pre-dinner moment or a refined experience enjoyed entirely on its own.
The series opens with - Just Give Me One Good Riesling! an effortlessly elegant pairing: a shared grazing experience accompanied by a bottle of Riesling, selected to complement a menu of refined, generous plates.
Designed for sharing, conversation, and unhurried enjoyment, this experience sets the tone for the season -relaxed, elevated, and beautifully considered. This experience is ideal for couples, friends, and intimate groups and is available on Friday 16 & Saturday 17 January and Friday 23 & Saturday 24 January. Available in the bar only.

Welcoming Tyson Stelzer in 2026
International Champagne Writer of the Year Tyson Stelzer is proud to announce that his Advanced Champagne Certificate is back for its fifth year! The venue will be the brand new Albion Room at Hervés Restaurant in Brisbane, with three- and five-course lunches created by none other than Shannon Kellam himself!
Spanning five masterclasses over the weekend of 31 January - 1 February, join Tyson as he goes deep under the surface of the terroirs of each of Champagne’s key districts, explores the influence of each of its varieties and discovers the effects of malolactic, tank and barrel fermentation, dosage, young, middle-age and old reserves, young and old disgorgements and young, old and very old vintages. Explore the intricacies of vintage and prestige champagnes over two lunches.

Begin your experience with a glass of Perrier-Jouët Champagne on arrival, setting the tone for an intimate and unforgettable dining journey. From there, indulge in a thoughtfully crafted four-course menu, inspired by classic French technique and designed to celebrate the finest seasonal ingredients and elegant flavours.
For those wishing to indulge further, elevate your experience with freshly shucked oysters to commence the evening, a luxurious cheese course for a truly decadent finale, or a paired wine experience, expertly selected to harmonise beautifully with each course.
This Valentine’s Day experience is offered at $140 per person, with optional enhancements available to tailor an evening of pure indulgence.
